Behold! The Madeleines!

Could these be what Proust was talking about?

I was turned on to these madeleines by my new friend Anita, who said they were amazing. Guess what? She was right. So, so right!

I’ve always loved madeleines. I’ve eaten them in France, New York, San Francisco (I know, I know, but there are a lot of French chefs in these U.S. cities), and everywhere else they turn up. I don’t consider myself an aficionado, but I can say with confidence that these are the best madeleines I’ve ever tasted! They’re crispy and slightly egg-y and light and, well, perfect, just perfect.

It only makes sense since Léa Linster is a big-deal Luxembourgian chef. She has been a sensation since the late-1980’s when she received a coveted Michelin star (1987) and won the 1989 Bocuse d’Or (to date, the only woman to accomplish this). Linster owns Restaurant Léa Linster, Au Quai de la Gare and Kaschthaus.
